Hash Brown Frittata
Sunday morning I made a Hash Brown Frittata. Kind of my own recipe, I just make it up as I go along. In a oven proof skillet I brown hash brown's in a little oil (the kind in the refrigerator section). Then brown sausage link's (I use turkey sausage, way less fat). Cut the sausage in bite size pieces and mix place on top of hash brown's. Whisk 6 eggs in a bowl, add a dash of milk and pour over potatoes and sausage. Add shredded cheddar cheese on top and I also cut up green peppers too. Bake at 350 degrees for about 10 minutes or until eggs are set.

Looks good. Your my kind of cook. Just throw it in the skillet~no measuring involved. We have 35 hens and 1 Mr. Happy, so I'm are always looking for ways to use up the eggs.
