Dishin it up at Deena's

One of the new recipes I have tried in the last couple of weeks. It was very good. My husband wants it again soon. I served it with some leftover corn and leftover roasted vegetables.
 Chicken Pot Pie Bubble Up

2 cups of cooked chopped chicken
1 can (10.75) oz cream of chicken soup (I used the healthy request)
1 cup sour cream
1 cup cheddar cheese
1 1/2 cup frozen mixed vegetables
1 12 oz can refrigerated Grands Jr biscuits.

Preheat oven to 375 degrees. Lightly spray a glass 9x13 inch pan with cooking spray.

In a large bowl stir together all ingredients including frozen vegetables. Remove biscuits from can and cut each biscuit into 4 pieces. Toss with chicken mixture. Bake for 25-30 minutes.

Yes that is what I will call my cooking show! I am always cooking something and here are a few of my recent dishes. I really should have a cooking show but don't know if my audience could handle some of the mistakes I make in my kitchen but it usually turns out pretty good. Anyway that's what my family and friends say. If you like what you see let me know.

Baked Parmesan Chicken and Blueberry Brunch Cake

Baked Parmesan Chicken and Blueberry Brunch Cake was on the menu for Sunday, they both are pretty easy and oh so good. I hope you enjoy the recipes and try them soon.

Baked Parmesan Chicken

6 boneless skinless chicken breasts
2 Tbsp of olive oil
2 cloves garlic, crushed
2 cups marinara sauce
1/4 cup chopped basil or use dried in you don't have fresh
8 oz Mozzarella cheese, shredded
4 oz Parmesan, grated
1 package of garlic croutons
red pepper flakes if you want some heat
salt and pepper to taste

Brown the chicken breast in the olive oil and I added a little to my baking dish also.
Put in glass baking dish, cover with marinara sauce, garlic, fresh Mozzarella cheese, Parmesan cheese, and basil.
Pour the croutons on top and drizzle with a little olive oil.

Bake at 350 degrees for 15 to 30 minutes until chicken is done and cheese is melted.

Serve over spaghetti.

Blueberry Brunch Cake

1 cup all purpose flour
1/3 cup sugar
2 t. baking powder
1/2 t. salt
1 egg
1/2 cup milk
1/3 cup vegetable oil
1 T. lemon juice
1 cup fresh blueberries
1/3 cup sugar
1/4 cup all purpose flour
1 tsp cinnamon
1/2 cup chopped pecans
4 T. butter

Combine first 4 ingredients in a medium bowl and set aside. Combine egg, milk, oil, and lemon juice; add to dry ingredients, mixing well. Pour batter into a greased 8" square baking pan; sprinkle with blueberries. Combine remaining ingredients; sprinkle over blueberries. Bake at 350 degrees for 40 minutes.

Two new recipes-Taco Soup and Taco Spaghetti

The last couple of weeks I have made Taco Soup a couple of times. It's really good to take to work for lunch on a cold day. Last Sunday I made a new recipe, Taco Spaghetti. It was so good. I hope you enjoy the recipes.

Taco Soup
1 to 1 1/2 pounds lean hamburger
1 medium onion
1 can black beans
1 can kidney beans
2 tablespoons of taco seasoning
1 large can diced tomatoes, sometimes I use another small can
Add some water
1 can corn undrained
Brown hamburger with onion, drain grease off, add other ingredients and simmer for a while.
Serve with sour cream and tortilla chips.
Yum!!!

Taco Spaghetti
1 pound or so of ground beef
1 small chopped onion
3/4 cup water
2 tablespoons of taco seasoning
11 oz can of corn drained
1 cup of cheddar cheese
3/4 cup salsa
5 oz or so of broken spaghetti broken into smaller pieces

Cook and drain your pasta. Brown ground beef with onion. Drain any fat, then add taco seasoning and water and bring to a boil, reduce heat and simmer for a couple of minutes. Add corn, pasta, salsa, half of cheese. Lightly mix. Pour into greased 2 qt casserole dish. Cover and bake at 350 degrees for 20 minutes. Top with rest of cheese and serve with sour cream and taco chips if desired. I cooked mine in an oven proof skillet so it only took the one pan. I cut into pie sized wedges, a dollop of sour cream on top and tortilla chips. The leftovers were just as good as the day I made it.

Cooking like Grandma on Sunday







Both my grandmother's cooked big meals on Sundays so I always try to do that too. Yesterday I started off with blueberry oatmeal pancakes and turkey sausage, made a marinade for a pork loin which I sliced later because we ran out of time and my husband grilled it on the charcoal grill, then I made apple pie bundles. We went to the farm to get hay for the girls at our house and found a couple of new babies there. I will post those pictures later. We have 35 cows at our house and there are around 60 or so at the farm, a lot of them expecting babies so there will be about 100 there by spring. That keeps my husband pretty busy taking care of all that plus running his business. His dad is 89 now so he can't keep up with it as much as he used too. That's all right, we really enjoy it. We have a lot of new babies at our house, I will try to post their pictures this week. Back to the Sunday cooking, my husband always tells me my grandma's would be proud of me.

Hash Brown Frittata



Sunday morning I made a Hash Brown Frittata. Kind of my own recipe, I just make it up as I go along. In a oven proof skillet I brown hash brown's in a little oil (the kind in the refrigerator section). Then brown sausage link's (I use turkey sausage, way less fat). Cut the sausage in bite size pieces and mix place on top of hash brown's. Whisk 6 eggs in a bowl, add a dash of milk and pour over potatoes and sausage. Add shredded cheddar cheese on top and I also cut up green peppers too. Bake at 350 degrees for about 10 minutes or until eggs are set.

Puff Pancake

This is what I made for breakfast a couple of weeks ago. It's called a Puff Pancake and it was yummy. I posted a picture on facebook and a friend of mine said "What is that and I want one" I will make one for him soon. The recipe calls for fresh fruit in the middle. Think about it, this summer with fresh strawberries or blueberries. Oh Yes!! Here is the recipe. I hope you enjoy

2 eggs
1/3 cup milk (I used skim) helps with the fat and calories a little
1/3 cup flour
2 tsp sugar
1/4 tsp salt
1 tsp butter


Melt 1 tsp of butter in an oven proof 8" or 9" pan and coat the bottom and sides with the butter. (Cast Iron would be good I bet.) Whisk all ingredients together and pour into the pan. Add the fruit of choice in the center and bake in the oven set at 450 degrees for 15 minutes. Remove from pan and let sit for one to two minutes. (Don't be alarmed if the pancake looks huge, it will deflate.) Sprinkle with confectioners sugar and serve. Then get ready for all the kisses from your husband and kids. Ha!!
