Baked Parmesan Chicken and Blueberry Brunch Cake

Baked Parmesan Chicken and Blueberry Brunch Cake was on the menu for Sunday, they both are pretty easy and oh so good. I hope you enjoy the recipes and try them soon.

Baked Parmesan Chicken

6 boneless skinless chicken breasts
2 Tbsp of olive oil
2 cloves garlic, crushed
2 cups marinara sauce
1/4 cup chopped basil or use dried in you don't have fresh
8 oz Mozzarella cheese, shredded
4 oz Parmesan, grated
1 package of garlic croutons
red pepper flakes if you want some heat
salt and pepper to taste

Brown the chicken breast in the olive oil and I added a little to my baking dish also.
Put in glass baking dish, cover with marinara sauce, garlic, fresh Mozzarella cheese, Parmesan cheese, and basil.
Pour the croutons on top and drizzle with a little olive oil.

Bake at 350 degrees for 15 to 30 minutes until chicken is done and cheese is melted.

Serve over spaghetti.

Blueberry Brunch Cake

1 cup all purpose flour
1/3 cup sugar
2 t. baking powder
1/2 t. salt
1 egg
1/2 cup milk
1/3 cup vegetable oil
1 T. lemon juice
1 cup fresh blueberries
1/3 cup sugar
1/4 cup all purpose flour
1 tsp cinnamon
1/2 cup chopped pecans
4 T. butter

Combine first 4 ingredients in a medium bowl and set aside. Combine egg, milk, oil, and lemon juice; add to dry ingredients, mixing well. Pour batter into a greased 8" square baking pan; sprinkle with blueberries. Combine remaining ingredients; sprinkle over blueberries. Bake at 350 degrees for 40 minutes.

I paid $1.00 for this copper pot at the swap meet last weekend. I love old copper.

So far all I have been blogging about are our cows, sheep, and farm I want to show you today just a few of the little vintage things I collect. We have a couple of really good antique shops in our local area and I am there about every week. One of the new shops called Olde Town Antiques on I-44 right between Springfield and St. Louis, Mo has a swap meet every weekend and oh yes I think I have been there every Saturday. I'm sorry I haven't posted for a while but a week ago Sunday my husband and I were turkey hunting on our farm and I harvested a turkey. I guess I had my shotgun to far into my shoulder because the next day my chest started hurting and it got worse the next day. I just took ibuprofen and it would get better. Well on Friday I made a doctor appointment for the following Monday. Actually it was my breast that was hurting and all us women know what a scare that is but I had been for my yearly checkup the week before so I figured it was the recoil from the gun. My doctor just thinks I bruised some ribs and the pain radiates to the breast. Then Monday night a huge bottle of detergent fell off the washer on the floor and when I went to the utility room half of that had spilled on the floor.Oh, that was fun to clean up. Let me tell you I was slipping and sliding around but oh what a clean floor I have now. When I came back upstairs the pan I had on my solid surface cook top (milk, butter, water) was boiling over and had ran all over the stove and baked on the burner. My husband was cooking on the bbq grill and when he came in I told him what had happened and he said I was only gone for 20 minutes, how did all that happen? Lol!!! One night he came in and I had caught the dish towel on fire. Really people I am a good cook, I just try to do too many things at a time. Well anyway here are a few pictures I have taken recently. I didn't post any pictures of me and my turkey although I am proud of my success. This is my third large bird in my four years I have hunted. We do eat the meat and it is living the country life. I am from a hunting family and my husband and I enjoy doing this together. I wrote a story about our hunt 2 years ago. The NWTF is going to print my story in their magazine Turkey Country and I am very proud of that. I am joining this party. You can find me here.

I haven't posted for two weeks I know but I wanted to make sure the Mama and her babies were safe before I told you what happened. Two weeks ago somehow they got out of the barn lot and ran off. They came back but then she wouldn't come to me. She would run off every time we got close to her. Then last Tuesday night I told Richard I was going to put her feed bucket with her special feed out in the field so she could eat some of it. I went to the barn and got the bucket, rode the 4wheeler back to her and called to her, she looked up and I shook the bucket and here she came running to me so I walked to the barn, they all three followed, I went into the lot, she came in, I walked into the barn and she walked right in with the babies following. I couldn't believe it but I was so glad they were safe again so now every morning Richard lets her out and in the evening I put them back in so they will be safe at night. Crazy Mama sheep!!! Then last Friday we had a pretty bad storm and the Internet was down all weekend. I felt isolated from the world. No Facebook, No blog, I couldn't look up anything. And we have been Turkey Hunting the last two mornings with no luck yet. Here are some recent pictures of life here at our place.

Happy Easter to all my Blogger Friends, I hope you have a blessed weekend. I have a few pictures to share. I did very little Easter decorating this year, just been to busy with all the new babies in fact we have a heifer in labor right now, it's her first baby so we are watching her very close. We are going out to eat with friends for all you can eat catfish then back to the farm and hopefully she can have this calf on her own..
