Baked Parmesan Chicken and Blueberry Brunch Cake

Baked Parmesan Chicken and Blueberry Brunch Cake was on the menu for Sunday, they both are pretty easy and oh so good. I hope you enjoy the recipes and try them soon.

Baked Parmesan Chicken

6 boneless skinless chicken breasts
2 Tbsp of olive oil
2 cloves garlic, crushed
2 cups marinara sauce
1/4 cup chopped basil or use dried in you don't have fresh
8 oz Mozzarella cheese, shredded
4 oz Parmesan, grated
1 package of garlic croutons
red pepper flakes if you want some heat
salt and pepper to taste

Brown the chicken breast in the olive oil and I added a little to my baking dish also.
Put in glass baking dish, cover with marinara sauce, garlic, fresh Mozzarella cheese, Parmesan cheese, and basil.
Pour the croutons on top and drizzle with a little olive oil.

Bake at 350 degrees for 15 to 30 minutes until chicken is done and cheese is melted.

Serve over spaghetti.

Blueberry Brunch Cake

1 cup all purpose flour
1/3 cup sugar
2 t. baking powder
1/2 t. salt
1 egg
1/2 cup milk
1/3 cup vegetable oil
1 T. lemon juice
1 cup fresh blueberries
1/3 cup sugar
1/4 cup all purpose flour
1 tsp cinnamon
1/2 cup chopped pecans
4 T. butter

Combine first 4 ingredients in a medium bowl and set aside. Combine egg, milk, oil, and lemon juice; add to dry ingredients, mixing well. Pour batter into a greased 8" square baking pan; sprinkle with blueberries. Combine remaining ingredients; sprinkle over blueberries. Bake at 350 degrees for 40 minutes.

  1. YUM!! Everything looks sooo good! I like to bake Chicken Parmesan too, gets the cheese all gooey and melty! :)
