Puff Pancake

This is what I made for breakfast a couple of weeks ago. It's called a Puff Pancake and it was yummy. I posted a picture on facebook and a friend of mine said "What is that and I want one" I will make one for him soon. The recipe calls for fresh fruit in the middle. Think about it, this summer with fresh strawberries or blueberries. Oh Yes!! Here is the recipe. I hope you enjoy

2 eggs
1/3 cup milk (I used skim) helps with the fat and calories a little
1/3 cup flour
2 tsp sugar
1/4 tsp salt
1 tsp butter


Melt 1 tsp of butter in an oven proof 8" or 9" pan and coat the bottom and sides with the butter. (Cast Iron would be good I bet.) Whisk all ingredients together and pour into the pan. Add the fruit of choice in the center and bake in the oven set at 450 degrees for 15 minutes. Remove from pan and let sit for one to two minutes. (Don't be alarmed if the pancake looks huge, it will deflate.) Sprinkle with confectioners sugar and serve. Then get ready for all the kisses from your husband and kids. Ha!!

  3. I made this for breakfast and it was really good! Tasted kind of like french toast. We will have this again and probably often. Thanks for sharing!
